Gingerbread

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup margarine or butter
1/2 cup granulated sugar
1 large egg, beaten
2/3 cup molasses
3/4 cup buttermilk

Preheat oven to 350F. Lightly grease an 8x8-inch pan. In medium bowl, sift flour. Add baking powder, baking soda, salt, ginger, cinnamon and nutmeg. Sift again; set aside. Beat margarine or butter and sugar until light and fluffy. Add egg and beat thoroughly. Stir in molasses. To this mixture, add half of the buttermilk and half of the flour mixture, stirring only enough to mix well. Continue with second half of each, mixing well. Pour into prepared pan. Bake 45-50 minutes, or until cake tester inserted in center comes out clean. If desired, garnish with whipped cream and sprinkle with nutmeg. Makes 9 servings.
