Spiced Fruit Bread (Bread Machine)

Water (80F) 1cup 1 cups 1 cups
Lemon juice 1 tsp. 1 tsp. 1 tsp.
Butter or margarine 1 tbsp. 2 btsp. 3 tbsp
Bread flour 2 cups 3 cups 4 cups
Sugar 1 Tbsp. 2Tbsp. 3 Tbsp.
Dry milk 1 Tbsp. 2 Tbsp. 3 Tbsp.
Salt 1 tsp. 1 tsp. 2 tsp.
Apple pie spice 1tsp. 2tsp. 3tsp.
Bread machine yeast 1tsp. 1 tsp. 2 tsp.
Dried apples, diced* cup cup cup

Have ingredients at room temperature. Accurately measure all ingredients. For flour, first stir, then spoon into a dry measuring cup and level off.

Add ingredients, except dried apples, to bread machine pan in order suggested by the manufacturer. Recommended cycle: BASIC/WHITE BREAD cycle; medium crust color. If your bread machine has a FRUIT/NUT signal, add the dried apples at the audible signal OR add them near the end of the kneading stage.

It is all right to open the machine and touch the dough to check its consistency. Do this about 5 minutes into the KNEAD cycle. The dough should form a soft ball around the kneading blade. If it is too dry, add liquid to 1 tablespoon at a time; if it is too wet, add 1 tablespoon of flour at a time until right dough consistency is reached.

Remove bread from the pan and cool on a wire rack.

*Variations: Diced, dried fruits such as apricots, cherries, cranberries or a combination may be substituted.
